Vegan Shawarma

Hey there, foodies! We're back with another mouthwatering recipe that's sure to make your taste buds dance. This time, we're bringing the vibrant flavors of the Middle East straight to your kitchen with a vegan twist. Ready to meet your new favorite meal? Say hello to our delectable Vegan Shawarma! It's packed with rich spices, bursting with savory goodness, and best of all, it's 100% cruelty-free.

We know the ingredients list looks a little long and intimidating, but this is due to the variety of spices we're going to use! Let's get cooking!

Ingredients:

  • 600 g oyster mushrooms
  • ½ tbsp sage
  • 1 tsp cajun all-purpose
  • 1 tbsp garlic powder
  • 1 tbsp dried oregano
  • ½ tbsp cumin
  • 1 tbsp onion powder
  • 1 tsp cayenne pepper
  • 1 tsp black pepper
  • 1 tbsp cold water
  • 1 tbsp lemon juice
  • 2 tbsp harissa paste
  • ⅓ cup syrup
  • Pita bread
  • Small handful sliced tomatoes
  • Small handful sliced cucumbers
  • Small handful sliced red onions
  • Small handful chopped parsley

For the Garlic Tahini Sauce:

  • 1/2 cup tahini
  • 1/4 cup water
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • Salt to taste

Instructions:

  1. Preheat the oven to 392°F / 200°C.

  2. Make a seasoning mix by combining all dry ingredients together. This includes sage, smoked paprika, all-purpose seasoning, garlic powder, oregano, cumin, onion powder, cayenne pepper, and black pepper.

  3. Keep oyster mushrooms in large clusters, add oil and gently rub with half of the seasoning mix, being careful not to break apart into small pieces.

  4. Save 2 tbsp of seasoning mix for later (salad) and then add lemon, water and maple syrup to the remaining mix. Mix together and set aside.

  5. Add oil to a hot skillet, add a couple oyster mushroom clusters and press down while frying (use a weighted implement / heavy pan for the best results). Flip mushrooms and press down again. Fry until browned. Repeat for all mushrooms before removing from the pan and leaving to rest for 5 minutes.

  6. Add fried, pressed oyster mushroom clusters to a skewer. Brush generously with liquid seasoning mix and place on a baking tray. Put in the oven to bake for 15 minutes.

  7. Remove mushroom from the oven and slice into Shawarma pieces.

  8. Make a quick salad by combining tomatoes, cucumbers, red onions, parsley and the 2 tbsp of seasoning mix you set aside earlier.

  9. Make garlic tahini sauce by combining the listed ingredients together.

  10. Serve Shawarma pieces on a pitta bread, with salad and garlic tahini sauce.
